Tin Fish Curry

Ingredients
½ cup Harvestime Peas
oil
1 onion chopped
2 cloves garlic crushed
1 teaspoon cumin seeds
Curry leaf
2 tablespoons curry powder
1 tin chopped tomato
250 grams brinjal cubed
1 can tinned fish
Salt to taste
Chopped dhania
Served with Pap
Directions
Prep Time: 5 Minutes
Cooking Time: 30 - 35 minutes
Serves: 6
- Heat a pot on medium heat
- Add the onions and allow to caramelize
- Next add the garlic and cumin seeds – braise for a minute before adding the curry powder and curry leaf
- Mix well and add the chopped tomatoes
- Add the cubed brinjal and allow to cook for about 25-30 minutes until the brinjal has softened – add a little water if needed
- Add the tinned fish and peas and simmer for 5 minutes on low and switch off
- Garnish with chopped dhania
- Serve hot with pap
