Soya Mince Cottage Pie
Ingredients
250 grams Harvestime Butternut Chunks
500 grams Harvestime Diced Potato
200 grams soya mince
oil
1 onion chopped
2 teaspoons garlic and herb seasoning
1 can tinned tomato
Salt and pepper to taste

Prep Time: 10 minutes
Cooking Time: 45 -60 minutes
Serves: 6
- Preheat oven to 200 degrees Celsius
- Boil potatoes win water until soft, mash with butter and warmed milk and set aside
- Soak the soya mince according to package instructions
- Heat a pot on medium heat
- Add the onions and allow to caramelize
- Next add the garlic and herb seasoning – braise for a minute before adding the chopped tomatoes
- Add the chopped tomatoes and butternut chunks and mix well
- Add in the soya mince and simmer on low for about 15 minutes
- Adjust the seasoning
- Transfer to an oven proof dish, top with the potato mash and bake for 35- 40 minutes until golden brown
