Peri Chicken Livers Loaded Fries
Ingredients
1 kg Chicken Livers
2 tablespoons Oil
2 tablespoons garlic crushed
1 large onion diced
1 teaspoon masala
2 teaspoons chili powder
3 teaspoons paprika
1 tablespoon tomato paste
1 cup Chicken stock
Salt and pepper to taste
Topping
Onion – diced
Chopped chilli
Directions
Prep Time: 5 minutes
Cooking Time: 30 - 40 minutes
Serves: 4
- In a pot add oil and allow to heat, fry onions until caramelized
- Add the garlic and cook for a further minute
- Now add the chicken livers and cook for about 5 minutes until browned
- Add the salt and the spices and fry for 2 minutes
- Add the tomato paste and stock and cook for about 8 - 10 minutes
- Remove from heat
- Adjust seasoning
- Add lashings of chicken livers onto the Harvestime chips
- Garnish with the items listed under toppings and serve
