Oven Baked Fish with Veg and Tomato

Ingredients
3 cups Harvestime All-in-One Mix
1 kg fish fillets – Hake
Oil
2 large onions thinly sliced
3 cloves garlic crushed
3 teaspoons paprika
½ teaspoon chilli flakes
2 teaspoons mixed herbs
4 - 5 large tomatoes chopped
1 chicken stock cube
Water
Salt and pepper to taste
Fresh parsley chopped – garnish
Directions
Prep Time: 10 Minutes
Cooking Time: 45 Minutes
Serves: 4 - 5
- Preheat oven to 180 Degrees Celsius
- Heat oil in a large skillet on medium heat
- Add the onions and cook for about 8 - 10 minutes before adding in the crushed garlic
- Allow to sauté for a minute then add the paprika, chilli flakes and mixed herbs
- Season and add in the chopped tomatoes and stock cube
- Let the tomatoes cook and break down – about 10 - 15 minutes
- In goes the All in One mix
- Mix well and cook for a further 10 minutes until veg have softened, remove from the heat
- Season the fish fillets and place them in a large oven tray in a single layer
- Drizzle with oil and top the fish fillets with the veggie tomato mix
- Pop into the oven and bake for 15 minutes, until the fish is cooked and flaky
- Garnish and serve
