Mutton Curry Stew
Ingredients
2 cups Harvestime Mix Veg
1 kg Chopped mutton pieces for curry
1 – 2 tablespoons oil
Cinnamon sticks
2 cloves
2 onions sliced
2 tablespoons garlic and ginger paste
1 bay leaf
Curry leaves
3 tablespoons Durban masala
3 large tomatoes chopped
2 teaspoons cumin and coriander powder
Water
3 large potatoes cubed
Salt and pepper
Garam masala
Chopped coriander
Directions
Prep Time: 5 minutes
Cooking Time: 80 minutes
Serves: 4 - 6
- Add oil to a large pot on medium heat and add the cinnamon sticks, bay leaf and cloves, allow to fry for a minute or two before adding the sliced onions
- Fry the onions until translucent and then add in the ginger and garlic paste, let it fry for a minute
- Add in the chopped tomatoes and curry leaves and mix well, allow to cook for 5 minutes before adding the durban masala, cumin and coriander powder
- Give it a good toss and add in the meat
- Cook on medium low heat until the water is released about 20 - 25 minutes
- Add more water, about a cup and cook for a further 20 minutes
- Now add in the potatoes and cook for 20 minutes before adding the mix veg
- After 10 minutes, sprinkle the garam masala
- Remove from the heat
- Garnish with coriander and serve
