
Mince, Green Beans & Potato Curry

Ingredients
800 grams Beef Mince
2 tablespoons Oil
2 fresh chillies
2 onions diced
2 tablespoon garlic and ginger
3 tablespoons curry powder
2 tablespoons tomato paste mixed with a little water
2 large tomatoes chopped
3 large potatoes diced
Salt and pepper to taste
Chopped coriander
Directions
Serves: 4 - 6
Prep Time: 5 minutes
Total Time: 45 minutes – 1 hour
- Heat oil in large pot and fry the onions until translucent
- Add the chillies and garlic and ginger and cook for a minute before adding the curry powder, mix with the onions and be careful that the spices don’t burn
- Add the mince and allow fry for about 10 minutes
- Add the tomato/water mixture and the chopped tomatoes, followed by the green beans and potatoes
- Allow to cook for until green beans and potatoes are done
- Adjust seasoning
- Garnish with fresh chopped coriander
- Serve with rice or pap
