Country Mix Pork Trotters
Ingredients
Salt and pepper
1kg Pork Trotters
750ml Beef Stock
2 Bay Leaf
2 TBSP Oil
1 Onion (finely chopped)
1 TBSP Crushed Garlic
1 tsp Curry Powder
3 TBSP Tomato Sauce
2 TBSP Chutney
1 TBSP Worcestershire Sauce
1 Cup Stock

Prep Time: 10 -15 minutes
Cooking Time: 60 minutes
Serves: 6
- Place the pork trotters into a deep saucepan. Add beef stock and bay leaf and simmer on medium heat for an hour. Remove trotters from the pot, keep aside the stock.
- In another saucepan, add the oil and fry the onion until soft. Add the garlic and fry for a further 2 minutes. Add the spices and fry for 2 minutes.
- Add the tomato sauce, chutney and Worcestershire sauce and mix well.
- Return the trotters to the pot and add the remaining stock. Simmer for an additional 45 minutes or until the trotters are tender.
- Add the Harvestime Country Mix to pot, and simmer for 10 minutes.
- Put trotters in a serving dish and sprinkle with chopped coriander leaves and serve.
