Chicken Liver & Mix Veg Pasta
Ingredients
300 grams Harvestime Mix Veg
1 ½ packet Spaghetti boiled and set aside
Oil
1 kg chicken livers cleaned
1 large onion diced
4 cloves garlic finely chopped
5 tablespoons tomato paste
1 ½ cup chicken stock
Salt and pepper to taste
Chopped parsley

Prep Time: 10 minutes
Total Time: 30 minutes
Serve: 5 -8
- Season the chicken livers
- Heat a large pan/pot on medium to high heat, add the oil and fry the chicken livers in batches until browned on both sides – remove the livers from the pan
- To the same pan, add more oil if needed and fry the onions until translucent
- Add the garlic and fry for 30 seconds before adding the Harvestime mix veg
- Allow to fry for about 2 minutes on high heat
- Now add the tomato paste and slowly add the chicken stock a little at a time
- Allow to simmer for 8 minutes until reduced
- Add the livers back into the pot and cook for a further 2 minutes
- Season with salt and pepper
- Serve with spaghetti or pasta of choice
- Garnish with chopped parsley & enjoy!
