Ingredients
500 grams packet Harvestime Country Mix
1,2kg thighs
Oil
1 large onion chopped
2 tablespoon crushed garlic and ginger
2 tablespoons chilli powder
4 large tomatoes chopped
2 cubes chicken stock dissolved in 400ml boiling water
1 can chickpeas (rinsed and drained)
2 cups chopped spinach
Salt and pepper
Directions
Serves: 4-6
Prep Time: 5 minutes
Total Time: 50 – 60 minutes
Sprinkle salt and pepper onto the chicken
In a large pot on medium heat the oil and start frying the chicken in batches – until the skin is golden in colour- about 8 minutes
Remove the chicken from the pot and set aside
Add the onion to the pot and cook for about 5 minutes before adding the garlic and ginger, followed by the chilli powder
Mix well before adding the tomatoes and Harvestime Country Mix – cook for 5 minutes
Now add in the stock and the chicken
Allow to cook for 20 minutes and then add the chickpeas and spinach
Cook for a further 10 minutes and switch off the heat
Adjust seasoning to taste
Serve with rice or pap
