Peri Chicken Livers & Chips

Ingredients
Harvestime Straight Cut Chips
1 kg Chicken Livers
Oil
2 tablespoons garlic crushed
1 large onion diced
2 red peppers diced
2 teaspoons chili powder
3 teaspoons paprika
1 bay leaf
1 teaspoon cumin
2 tablespoons tomato paste
1 cup Chicken stock
½ cup cream
Salt and pepper to taste
Directions
Serves: 6-8
Prep Time: 5 minutes
Total Time: 30 minutes
- In a pot add oil and allow to heat, fry onions until caramelized
- Add the red pepper and garlic and cook for a further 3-5 minutes
- Now add the chicken livers and cook for about 5 minutes until browned
- Add the bay leaf, salt and the rest of the spices and fry for 2 minutes
- Add the tomato paste and stock and cook for about 8-10 minutes
- Now add the cream and simmer for a minute and remove from heat
- Adjust seasoning
- Garnish with parsley
- Serve with Harvestime Straight Cut Chips
