One Pot Chicken, Veg, and Rice Casserole

Ingredients
500 grams Harvestime Country Mix
2 tablespoons Oil
500 grams Chicken Fillets Cubed
2 tablespoons Chicken Spice
1 tablespoon Crushed garlic
1 large onion diced
1 green pepper diced
Fresh thyme
2 tablespoons mixed herbs
2 teaspoons paprika
4 – 5 cups chicken stock
300 grams rice washed and drained
Salt and pepper
Directions
Prep Time: 5 minutes
Cooking Time: 50 - 60 minutes
Serves: 5
- Heat oven to 180 Degrees Celsius
- Heat a large pan on medium to high heat, add a dash of oil and start frying the meatballs in batches – remove and set aside
- To the same pan, add the garlic and onions and fry until translucent
- Now add the tomato paste and the onion and tomato mix and mix well before adding in the chilli flakes, mixed herbs and paprika – allow to cook for 8 minutes
- Add the corn and cook on medium heat for 8 - 10 minutes until thickened
- Add the meatballs back to the pot and simmer for 3 - 4 minutes and remove from heat
- Transfer the meatball and tomato sauce mixture to a large oven proof casserole
- Top with grated cheese and bake for 15 minutes
- Garnish with chopped parsley and enjoy
