Mozambican Chicken Bake & Chips

Ingredients
Harvestime Straight Cut Chips
1.5kg chicken thighs
Oil
3 tomatoes blanched, chopped and set aside
2 tablespoons crushed garlic
Juice of 2 lemons about 2-3 tablespoons
1 teaspoon brown sugar
3 tablespoons paprika
3 tablespoons hot sauce of choice
1 tablespoon herb seasoning
Salt and pepper
Directions
Serves: 4-5 people
Prep Time: 5 minutes
Total Time: 60 minutes
- Preheat oven to 200 Degrees Celsius
- Cook chips according to package instructions
- In a pot, heat oil and add the crushed garlic and tomatoes and mix well
- Now add the rest of the ingredients to the tomatoes (except the chicken) and allow to simmer for 5 minutes
- Allow the mixture to cool and them blitz into a sauce
- Spread onto the chicken and bake for 45 minutes until cooked and browned
- Serve with chips and side veg
