Mix Veg and Boiled Egg Curry

Ingredients
Oil
4 eggs boiled, peeled and kept aside
1 large onion sliced
2 teaspoons ginger and garlic paste
Salt to taste
2 - 3 tablespoons curry powder
3 tomatoes chopped
Chopped coriander - optional
Directions
Prep Time: 5 minutes
Cooking Time: 35 - 40 minutes
Serves: 4 - 5
- Heat a large pot on medium heat and add the oil and onions
- Fry for 5 minutes then add the garlic and ginger and the curry leaf
- Lower the heat and add the curry powder, mix well
- Next add the chopped tomatoes and season according to taste
- Allow to simmer for 10 minutes until thickened – add water if it gets to thick
- In goes the frozen mixed veggies
- Cook for 8 minutes, top with sliced boiled eggs and coriander and enjoy with pap, rice or bread
