Meatfree Loaded Fries

Ingredients
1 packet Harvestime Straight Cut Chips
2 tablespoons Oil
1 onion chopped
2 cloves Garlic
2 tablespoon curry powder
3 chopped tomatoes
1 tin kidney beans rinsed and drained
1 tin lentils rinsed and drained
Few teaspoons Inkomazi
1 small onion diced
3 red chillies – deseeded and chopped
Squeeze of lemon juice
Spring onions chopped
Salt and pepper to taste
Directions
Serves: 4 - 6
Prep Time: 5 minutes
Total Time: 30 minutes
- Heat oil, add onions and allow to cook before adding garlic and spices
- Add chopped tomatoes and mix well
- Allow to simmer for 8-10 minutes until the tomatoes have softened – add a little water if needed
- While the tomatoes are cooking, cook the chips and set aside.
- Add the lentils and kidney beans
- Season, cook for a further 5 minutes and remove from the heat.
- Place the lentil and kidney bean mixture onto the hot chips
- Dollop with the inkomazi, chopped onions, chopped red chili and spring onions
- Sprinkle salt and pepper and enjoy
