Country Mix & Rice Casserole

Ingredients
1 packet Harvestime Country Mix
1 cup Harvestime Peas
3 cups pre-cooked rice
Oil
1 large onion diced
1 tablespoon crushed garlic
2 tablespoons mixed herbs
2 cloves garlic crushed
2 tablespoons Mixed herb
2 teaspoons Paprika
1 packet mushroom soup powder mixed with 500m ml warm water
2 cups grated cheese
Chopped parsley
Salt and pepper
Directions
Serves: 4-6
Prep Time: 5 minutes
Total Time: 50 – 60 minutes
- Preheat oven to 200 Degrees Celsius
- Heat oil in a large pot/ pan (it must be large enough to hold the rice)
- Add the onions and allow to cook until translucent
- Next add the garlic, mixed herbs and paprika, followed by the frozen vegetables
- Allow to cook for 8 minutes and then add the mushroom soup liquid, cook for a further 5 minutes and then add the cooked rice, I cup of grated cheese and parsley and mix well
- Adjust seasoning
- Transfer to a large ovenproof casserole, top with the remaining cheese and bake for 10 minutes until cheese has melted
- Serve immediately
