Chicken & Veg Pasta

Ingredients
400 grams Harvestime All-in-One Mix
500 grams of chicken fillets cubed
1 tablespoon Oil
2 teaspoons crushed garlic
Robot peppers sliced
2 teaspoons Cajun spice
1 chicken stock cube
For the White Sauce
3 tablespoons butter
4 tablespoons flour
3 cups milk
1 cup chicken stock
Salt and pepper to taste
Directions
Prep Time: 5 - 10 Minutes
Cooking Time: 40 - 50 Minutes
Serves: 4 - 5
- Season the cubed chicken with salt and pepper and cajun spice
- Heat oil in a large skillet on medium to high heat
- Fry the chicken in batches until browned and cooked, remove and set aside
- In the same pan, add more oil if needed, add the garlic followed by the peppers
- Sauté for 2 minutes before adding in the All-in-One Mix
- Add cajun spice and stock cube and allow to cook for 10 minutes until the veg have softened
- Add the chicken back to the pot and toss well, cook for a minute and remove from the heat
Meanwhile, make your white sauce
- Heat butter in a pot on medium to high heat
- Once the butter has melted, add the flour and mix well
- Slowly add the milk and stock, keep stirring
- Allow to thicken, season and remove from the heat – ensure there are no lumps
- Pour the sauce over the chicken and mix well
- Serve this delicious sauce over cooked pasta
