Chicken & Rice Tomato Pilau

Ingredients
400 grams Harvestime Country Crop
Oil
1 kg chicken drumsticks
1 large onion finely chopped
3 cloves of garlic crushed
Basil chopped
1 can chopped tomatoes
3 heaped teaspoons paprika
1 red pepper finely sliced
300 grams rice
3 -4 cups chicken stock
Directions
Serves 5
Prep Time 5 minutes
Total Time 45 – 60 minutes
- Preheat oven to 180 degrees Celsius
- Heat oil in a heavy based pot
- Season the chicken and fry until golden on either side, remove and set aside
- To the same pan, add the garlic and onions and cook for 5 minutes
- Now add the red pepper and cook for a further 2 minutes before adding the paprika, tomatoes and rice and mix well
- Mix well and add the country crop into the rice
- Now add the stock and place the chicken thighs on top of the rice
- Allow to cook in the oven for 45 minutes until rice has cooked
- Garnish with chopped basil
