Chicken Pot Pie

Ingredients
300 grams Harvestime Mix Veg
500 grams chicken breasts cubed
2 tablespoons oil
2 teaspoons crushed garlic
1 heaped tablespoon brown onion powder
300 ml boiling water
3 teaspoons mixed herbs
Salt and pepper to taste
1 egg beaten
Puff pastry
Directions
Prep Time: 5 minutes
Cooking Time: 60 minutes
Serves: 4
- Heat the olive oil in a large pan over medium high heat
- Preheat oven to 200 Degrees Celsius
- In a large skillet add the margarine and onions and cook on medium heat for 4 - 5 minutes
- Add the garlic and sauté for a minute
- Add the chicken cubes and sauté for 4 minutes
- Add in the mixed herbs
- Mix the brown onion powder with the boiling water until dissolved
- Add the mix to the chicken and mix well – simmer for a minute
- Add in the frozen veg
- Cook until thickened – remove from heat
- Add the chicken mixture to a large oven proof casserole
- Roll out pastry and place on top of the chicken mixture
- Brush with beaten egg and make 2 slits on the pastry
- Bake for 25 - 30 minutes until pastry is cooked and golden
- Serve immediately with a large salad
