Chicken Fried Rice

Ingredients
500 grams Harvestime Country Mix
2 cups rice steamed
600 grams chicken fillets cubed
5 tablespoons soy sauce
2 teaspoons maizena
2 teaspoons water
1 tablespoon black pepper crushed
3 tablespoons Oil
1 large onion sliced
3 cloves garlic crushed
4 large eggs – optional
Salt and pepper to taste
Directions
Prep Time: 5 minutes
Total Time: 30 minutes
Serves: 6 -8
- Cook the rice and keep aside
- Combine the soy sauce, maizena, water and black pepper and mix well – keep aside
- Add 2 tablespoons of the soy sauce liquid to the chicken and toss well
- Heat oil in a large frying pan on medium to high heat
- One hot, start frying the chicken in batches until browned – remove the chicken
- To the same pan, add more oil if needed and fry the onions until translucent
- Add the crushed garlic to the onions, followed by the Harvestime Country Mix
- Cook for 5- 8 minutes before add the rest of the soy sauce liquid, combine well with the veggies
- Meanwhile scramble 4 eggs and keep aside
- Now add the scrambled egg and rice to the veg mixture and gently toss until it is combined
- Adjust seasoning
- Serve hot to the whole family.
