Chicken and Spicy Mayo Sandwiches and Slap Chips

Ingredients
3 Chicken breasts
3 teaspoons garlic and herb seasoning
1 onion sliced and fried until caramelized
½ cup mayonnaise
2 tablespoons peri peri sauce of choice
1 tablespoon oil for frying
Sliced white bread
Directions
Prep Time: 5 minutes
Cooking Time: 30 minutes
Serves: 5
- Season the chicken breasts and rub the garlic and herb seasoning all over the chicken
- Heat the oil in a pan and fry the chicken in batches until cooked, about 4 - 5 minutes per side, until the chicken is fully cooked through
- Allow the chicken to cool and then slice/ shred into pieces
- In a large bowl, mix the mayo and peri peri sauce, add in the chicken and caramelized onions and combine well
- Butter the bread in both sides and spread the chicken mixture onto the bread, cover with the other slice and toast on a hot griddle pan
- Serve with Harvestime Slap chips
