Cheesy Chicken & Sweetcorn Casserole

Ingredients
600 grams Harvestime Sweetcorn
2 cups Harvestime Straight Cut Chips
800 grams cooked chicken chopped into bite size pieces
4 tablespoons butter
½ cup flour
1 litre milk – warmed
3 tablespoons dried herbs of choice
2 cups grated cheese
Salt and pepper to taste
Directions
Prep Time: 10 minutes
Total Time: 35 – 40 minutes
Serves: 6 -8
- Preheat oven to 180 Degrees Celsius
- In an oven proof casserole place the frozen chips and sweetcorn and season with salt and pepper
- Now add the chicken on top of the frozen veg and keep aside
- Meanwhile In a pot , melt butter, add flour and mix until incorporated
- Slowly add the milk to the flour and butter mixture, mix well to break lumps
- Whisk constantly until it starts to thicken – add dried herbs
- Remove from the heat
- Add cheese and mix well
- Adjust seasoning
- Pour the cheesy sauce over the chicken and veg
- Bake for 20 minutes
- Top with cheese and bake for a further 5 minutes until cheese has melted
- Garnish with chopped parsley
