Cheesy Bacon and Veg Bake

Ingredients
600 grams Harvestime Country Mix
250 grams Diced bacon
3 tablespoons Margarine
1 onion diced
2 teaspoons crushed garlic
4 tablespoons flour
750 ml milk
200 grams grated cheddar
1 tablespoon mixed herbs
Salt and pepper
Directions
Prep Time: 5 minutes
Cooking Time: 50 minutes
Serves: 4
- Preheat oven to 180 Degrees Celsius
- Heat a large pan and fry the bacon until done and keep aside
- Add the onions and sauté for 5 minutes, add the garlic and sauté for a further minute before adding the veg – cook for 6 minutes and remove from the heat
- In a saucepan, add the margarine and once melted add the flour, cook for 2 minutes and gradually add the milk a little at a time – make sure there are no lumps
- Allow to thicken – stirring frequently
- Once thickened add the cheese and bacon – (keep some cheese for topping) and remove from the heat
- Place the slightly cooked veg in an oven proof casserole and pour over the cheesy sauce
- Top with the remainder of the grated cheese and bake for 20 - 25 minutes
- Serve hot
