Beef Sishebo

Ingredients
2 cups Harvestime Mix Veg
1 kg Beef for stewing
2 teaspoons oil
1 large onion diced
2 teaspoons garlic and ginger paste
1 bay leaf
2 tablespoons curry powder of choice
Mixed herbs
2 tablespoons tomato paste
3 large potatoes cubed
3 cups beef stock
Salt and pepper
Directions
Prep Time: 5 minutes
Cooking Time: ±90 minutes
Serves: 4 - 6
- Add oil to a large pot on medium heat and add the onions, fry until translucent
- Add the garlic and ginger and the bay leaves and fry for a further minute
- Add the spices and mixed herbs and mix well and then add the beef – add a dash of water and allow the beef to fry with the spices for 5 minutes
- Now add the tomato paste and stock and allow to simmer for about 45 minutes until the meat is beginning to soften
- Add in the chopped potatoes and cook for 20 minutes before adding in the frozen Mix Veg
- Add more water or stock if needed, cook for 10 minutes and it’s done when the meat is tender
- Adjust seasoning
- Serve with rice or pap
