Bean Curry Roti & Chips

Ingredients
1 packet Harvestime Slap Chips
Oil
1 onion chopped
2 teaspoons crushed garlic
3 large tomatoes grated
2 tablespoons curry powder
1 can butter beans rinsed and drained
3 -4 Roti’s
Grated cheese
Salt and pepper
Directions
Serves: 4
Prep Time: 20 minutes
Total Time: 10 minutes
- Fry the chips until half done and set aside
- Heat oil in a pot on medium heat and add the onions, fry until translucent before adding the crushed ginger
- Add the grated tomatoes and cook for 5 minutes before adding the curry powder
- Allow to simmer on medium heat for a further 8 minutes, before adding the beans
- Simmer for 5 minutes, adjust seasoning and then switch off
- Lay a roti flat and place chips in the middle, top with beans curry and then cheese and wrap
- Enjoy with friends & family
